We all have weeks where we go off the healthy train!  Sometimes we need a dish that’s going to whip us back on the train, for me a Quinoa dish will satisfy and inspire that healthy eating back!

I had been dreaming up a yummy Moroccan inspired quinoa salad and it goes like this..

1 qrt of eggplant

1 qrt of red capsicum

1 half onion

1 garlic clove

1 large field mushroom

2 handfuls of chopped kale

1 and a half apples (red or green, i used red)

1 tbsp of morrocan spice mix

2 tbsp of coconut oil

1 cup (or more if you want) of tri colour quinoa – you can use any colour it doesn’t matter

1/2 a cup of cashews

2 tbsp of nutritional yeast

Method:-

Fry off all vegetables except kale and apple – yes that’s a fruit 😉 leave that until the end.

Gently fry in coconut oil. once all is cooked add in apple and kale and let cook further for 1-2 minutes to soften.

Now that all the veggies and apple is cooked place in a large mixing bowl and place aside.

In the meantime cook quinoa in boiling water – 1 cup to 2 cups of water – stirring occasionally.

Once the Quinoa is cooked place into the bowl with the cooked veggies and toss together.

Cashew Cheezy sauce –

Using a small Nutri bullet or blender, blend the following:-

1/2 a cup of cashews

1/2 a cup of water

qrt of 1 onion

1 garlic clove

blitz on high speed until blended well into a sauce.

Add your Easy mixed Quinoa salad to a bowl and drizzle cashew cheeze sauce on top with a side of lemon wedge.

That’s it! So easy.

20-30minutes cooking time in total.

SO quick, so easy.

Quinoa is a complete protein with all amino s, vitamins and minerals.
