If ever there’s a vegetable you’d like to try in sweets, it has to be beetroot!

Today i made these yummy fudge balls as a dessert for myself in the evenings. I like to have some kind of healthy treat on hand for those nights I have a craving.

These are easy to make, you just need a blender or food processor.


1 large beetroot, cut into cubes.

1 cup of raw walnuts

1/2 a cup of raw cacao powder

handful of dried dates, soaked in boiling water for 10 minutes

1/2 a cup of coconut flour

1 tbsp of maple syrup

1 pinch of vanilla bean powder


Cut beetroot into cubes and place into your blender jug along with raw walnuts. Blend on high speed and scrape down the sides as required. Repeat process until you have a fudge consistency.

Add cacao, vanilla, coconut flour and maple syrup and blend further, scraping down the sides and insuring the cacao is mixed through thoroughly. At this stage the mix will be dry. Now add in your soaked dates slowly. Allow to run until dates have been broken down into the mix.

Once you have a dark pink wet batter remove from blender and form into balls of desired size. Roll your balls into desiccated coconut and place on a tray.

Chocolate drizzle:-

3 tpbs of raw coconut oil

2 tbsp of agave/maple/honey

1-2 tbsp of raw cacao powder


Place all ingredients into a bowl and whisk together with a fork until smooth.

Drizzle on top of Beetroot/cacao fudge balls and place into the freezer to allow the chocolate to set for 15 minutes.

Store in an air tight container in the refrigerator, these will keep for over a week.

Nutritionally these are packed full of vitamins, minerals including magnesium. They are high in beta-carotene which helps to fight free-radicals and boost the immune system. They are high in fiber thanks to the coconut flour, increase dopamine levels and is high in digestive enzymes from all the raw, unheated ingredients.
